Zoodles a.k.a Zucchini Noodles

Yes, no kidding... read on!


Anyhoo, I love making my own zoodles. Why should you make you own zoodles? Because the packaged zoodles may contain preservatives to prolong refridgerated shelf life. They also go bad too quickly, so if you don't use it right away you're just throwing away your $$. In addition, the frozen zoodles may contain sodium. There is absolutely no reason to add things you can't literally enjoy into your body!


Making zoodles is quick and simple with the right tool. There are many spiralizer on the market, but I'm all for simple easy to wash, easy to store, and on budget. I got my spiralizer from Amazon, under $10 bucks so can't go wrong with that. It's easy to get out so I end up using it quite a bit to make healthy meals. It's got sharp edges and in under a minute you can spiralize a whole zucchini. How about that?!


You'll also need hot water to cook the zoodles. Did I say I love my electric kettle?? Waiting for water to boil is a pain in the rump; then wash a pot...forget it. Electric kettle is a must have in the kitchen, it's used multiple times daily in my household. Kids love it for ramen & hot cocoa; And myself for tea, blanching kale, reconstitute shitake mushrooms, soak rice noodles, and the list goes on.


Oh yea... zoodles. Zoodles in my mind should be al-dente like pasta and mushy zoodles is a complete turn off.


How to lightly cook zoodles?

Wash your zucchini.

Spiralize it and place it in a big bowl.

Cover it with boiling.

Let sit 1-2 minutes.

Drain and squeeze out excess water.

Drizzle with olive oil/ melted butter. Sprinkle over dried oregano.

Optional, served with a slice of lemon.
